7/24 Recipes
In the Kitchen With Nina
Submitted By:   Staff

She's among the most visible, but least known people who could actually be called celebrities in professional fishing. Nina Wood is a co-founder of Ranger Boats, but most people only know her as the quiet, but supportive wife of Forrest L. Wood. Nina's all that and a very accomplished cook. This week, we begin a series of monthly recipes from Nina Wood - as well as some of her favorite outdoor cooking tips and some stories and wisdom she's collected during an eventful lifetime in Arkansas' Ozark Mountains.

We think you'll enjoy getting to know Nina Wood. We know you'll like the recipes.

Living and working on the farm and being married to a river guide meant that I always had plenty of hungry people around. Over the years, I've been fortunate enough to collect lots of recipes that everyone seems to like. Some of my favorite recipes are the ones that we used on the river trips. Shore lunch is one of the most special parts of a fishing trip and these hushpuppies were always a hit.

These are best fried where you have fried your day's catch of fish. I used to mix these up and send them with the guides to make on the gravel bar with their fisherman.

1 1/2 cups cornmeal
1/4 cup plain flour
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 cup finely chopped onion
1 egg
3/4 up milk (or water)

Stir ingredients together and add 3/4Cup milk (or water).
Mix until smooth.
Drop by tablespoons into hot grease, fry until brown.
Drain on paper towels.

Nina Wood has compiled some her own favorite recipes and recipes from family and friends in a cookbook entitled Nina's Favorite Recipes. Copies of the book are available for $9.95 plus $2.50 shipping. To order, call the Forrest L. Wood Outdoor Sports Gallery at (870) 453-3210.
